The process happens in three main stages:
1. Freezing
The food is first frozen to extremely low temperatures, typically around -30°F to -50°F (-34°C to -45°C). This freezes the water content within the food into ice.
2. Primary Drying (Sublimation)
Once frozen, the food is placed in a vacuum chamber. The pressure is lowered, and gentle heat is applied. 3. Secondary Drying (Desorption)
